1 cup coconut milk (canned or carton)

1 medium ripe banana

1 cup fresh pineapple chunks (or frozen)

1/2 cup mango chunks (fresh or frozen)

2 tablespoons chia seeds

1 tablespoon honey (or agave syrup for a vegan option)

1/2 teaspoon vanilla extract

Ice cubes (optional, for a thicker smoothie)

Fresh mint leaves (for garnish, optional)

Instructions
 

Start by preparing your ingredients. If using fresh pineapple and mango, peel and chop them into chunks.

    In a blender, combine the coconut milk, banana, pineapple, mango, chia seeds, honey (or agave), and vanilla extract.

      Blend on high until smooth and creamy. If you prefer a thicker consistency, add a few ice cubes and blend again.
