Ingredients

For the Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce (or tamari for a gluten-free option)

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon Sriracha (adjust for spice preference)

1 clove garlic, minced

1 teaspoon grated fresh ginger

1/4 cup warm water (to thin the sauce)

For the Noodles and Toppings:

8 oz rice noodles (or your preferred noodles)

1 cup shredded carrots

1 cup red bell pepper, thinly sliced

1 cup cucumber, julienned

1/2 cup fresh cilantro, chopped

1/4 cup roasted peanuts, chopped

2 green onions, sliced

Lime wedges (for serving)

Instructions

Prepare the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, Sriracha, minced garlic, and grated ginger until smooth. Gradually add warm water, a little at a time, until you achieve your desired sauce consistency. Set aside.

Cook the Noodles: Bring a large pot of salted water to a boil. Add the rice noodles and cook according to package instructions (usually about 4-7 minutes). Drain the noodles and rinse under cold water to prevent them from sticking.

Toss with Peanut Sauce: In a large mixing bowl, combine the drained noodles with the peanut sauce, ensuring the noodles are thoroughly coated.

Assemble the Bowls: Divide the dressed noodles into serving bowls. Top each bowl with shredded carrots, sliced red bell pepper, julienned cucumber, fresh cilantro, chopped roasted peanuts, and sliced green onions.

Serve: Squeeze fresh lime juice over the bowls for a zesty kick. Serve immediately and enjoy your colorful Spicy Thai Peanut Noodle Bowls!
