Roasted Garlic Mashed Cauliflower

1 large head of cauliflower, cut into florets

4 cloves of garlic, unpeeled

2 tablespoons olive oil

1/4 cup unsalted butter, at room temperature

1/4 cup cream cheese, softened

1/2 cup milk (or plant-based milk)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: A sprinkle of smoked paprika or chives for added flavor

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Garlic: On a baking sheet, toss the unpeeled garlic cloves with 1 tablespoon of olive oil and roast them in the oven for about 20-25 minutes, or until they’re soft and golden. Remove and let cool slightly before peeling.

      Prepare the Cauliflower: While the garlic is roasting, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 8-10 minutes, or until tender. Drain well and set aside.

        Combine Ingredients: In a large mixing bowl, combine the drained cauliflower, roasted garlic (squeezed from their skins), butter, cream cheese, and the remaining tablespoon of olive oil.

          Mash: Use a potato masher or an immersion blender to blend until smooth and creamy. Gradually add in the milk until the desired consistency is reached. Mix well to combine.

            Season: Taste and season with salt and pepper to your liking. For an extra kick, add a sprinkle of smoked paprika or fresh chives.

              Serve: Transfer the mashed cauliflower to a serving bowl and garnish with freshly chopped parsley.
