8 oz (about 225 g) pasta (fusilli or penne works well)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 bell pepper (red, yellow, or green), diced

1 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, finely chopped

Salt and pepper, to taste

For the Tzatziki Dressing:

1 cup Greek yogurt

1/2 cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and pepper, to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop cooking and cool down the pasta. Set aside.

    Prepare the Vegetables: While the pasta cools, prepare the vegetables. Chop the cherry tomatoes, cucumber, red onion, bell pepper, and olives. Set aside in a large mixing bowl.

      Make the Tzatziki Dressing: In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, olive oil, and lemon juice. Mix well until smooth. Season with salt and pepper to taste.

        Combine Ingredients: In the bowl with the vegetables, add the cooled pasta, crumbled feta cheese, and chopped parsley. Drizzle the tzatziki dressing over the salad.

          Toss and Serve: Gently toss all ingredients together until everything is well coated with the dressing. Taste and adjust seasoning if necessary.
