3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon cayenne pepper (adjust for spice preference)

Fresh parsley, chopped (for garnish, optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them out in a single layer on a clean kitchen towel. Pat them dry as thoroughly as possible to enhance crispiness during roasting.

      Make the Herb Mixture: In a large mixing bowl, combine the olive oil, minced garlic, smoked paprika, oregano, thyme, salt, black pepper, and cayenne pepper. Stir well to create a garlic herb blend.
