Banana Pudding with Vanilla Wafers

4 ripe bananas, sliced

1 box (12 oz) vanilla wafers

1 cup granulated sugar

1/2 cup all-purpose flour

1/4 teaspoon salt

4 cups whole milk

4 large egg yolks

2 teaspoons pure vanilla extract

1 tablespoon unsalted butter

Whipped cream (for topping)

Extra vanilla wafers and banana slices (for garnish)

Instructions
 

Prepare the Baking Dish: In a 9x13 inch dish, layer half of the vanilla wafers on the bottom and set aside.

    Make the Custard Base: In a medium saucepan, whisk together the sugar, flour, and salt. Gradually add the whole milk, whisking continuously to avoid lumps.

      Cook the Custard: Over medium heat, cook the mixture, stirring constantly until it thickens, about 10-15 minutes. When the mixture starts to simmer, remove it from heat.

        Tempering the Eggs: In a separate bowl, lightly beat the egg yolks. Slowly pour about a cup of the hot milk mixture into the egg yolks, whisking constantly (this tempers the eggs).

          Combine the Mixtures: Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Return to the stove over low heat and cook for an additional 2-3 minutes until very thick, stirring frequently.

            Finish the Custard: Remove from heat and stir in the vanilla extract and butter until fully incorporated.

              Assemble the Pudding: Immediately pour half of the custard over the vanilla wafers in the dish. Then, layer half of the banana slices on top of the custard. Add another layer of vanilla wafers, followed by the remaining custard, and finish with the remaining banana slices.

                Chill and Serve: Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight for the best results. Before serving, top with whipped cream and garnish with extra vanilla wafers and banana slices.
