Ingredients

1 pound ground chicken

1/2 cup breadcrumbs (preferably Italian-style)

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

1 large egg

1/4 cup fresh parsley, chopped

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

Salt and pepper to taste

Olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, red pepper flakes (if using), egg, parsley, salt, and pepper. Mix until just combined; avoid over-mixing to ensure tender meatballs.

Form the Meatballs: Using your hands, scoop out a portion of the mixture (about 2 tablespoons each) and roll into balls. Place each meatball on the prepared baking sheet, spacing them evenly apart.

Bake the Meatballs: Drizzle a little olive oil over the meatballs for added moisture and flavor. Bake in the preheated oven for 20-25 minutes or until the meatballs are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Add the Sauce and Cheese: Remove the meatballs from the oven and spoon a tablespoon of marinara sauce over each meatball. Sprinkle shredded mozzarella on top of the sauce.

Final Baking: Return the meatballs to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve and Enjoy: Remove from the oven, and let them cool for a few minutes. Serve hot with extra marinara sauce and a sprinkle of fresh parsley if desired. These meatballs can be enjoyed on their own, over pasta, or in a sub sandwich!
