2 medium zucchinis, sliced into 1/4-inch rounds

1 cup breadcrumbs (panko or regular)

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Prep the Zucchini: Begin by washing the zucchinis and slicing them into 1/4-inch rounds. You can choose to deseed them if desired for a less watery texture.

    Make the Coating: In a medium bowl, combine the breadcrumbs, grated Parmesan, garlic powder, dried oregano, salt, and black pepper. Mix well to ensure even distribution.

      Prepare the Egg Wash: In another bowl, whisk the eggs until they are fully combined.

        Coat the Zucchini Rounds: Dip each zucchini round into the egg wash, allowing excess to drip off. Then, coat it in the breadcrumb mixture, pressing lightly to adhere the coating well. Repeat with all zucchini slices.
