Caramelized Onion and Mushroom Frittata

6 large eggs

1 medium onion, thinly sliced

8 ounces cremini or button mushrooms, sliced

1 cup spinach, roughly chopped

1/2 cup grated Parmesan cheese

1/4 cup milk

2 tablespoons olive oil

1 tablespoon unsalted butter

Salt and pepper, to taste

Fresh herbs (such as thyme or parsley), for garnish

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Caramelize Onions: In a large oven-safe skillet, heat 1 tablespoon of olive oil and the butter over medium heat. Once the butter has melted, add the sliced onion. Cook, stirring occasionally, for about 15 minutes, or until the onions are soft and golden brown. Remove them from the skillet and set aside.

      Sauté Mushrooms: In the same skillet, add the remaining tablespoon of olive oil and add the sliced mushrooms. Sauté for about 5-7 minutes, until they are tender and golden. Season with a pinch of salt and pepper.

        Combine Ingredients: Add the caramelized onions back to the skillet with the mushrooms. Stir in the chopped spinach and cook for an additional 2 minutes, until the spinach wilts.

          Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, milk, Parmesan cheese, a pinch of salt, and pepper until well combined. Ensure there are no streaks of egg white remaining.

            Combine Everything: Pour the egg mixture over the caramelized onions, mushrooms, and spinach in the skillet. Gently stir to combine the ingredients, ensuring the veggies are evenly distributed.

              Cook on Stovetop: Cook the frittata on the stovetop over medium heat for about 3-4 minutes, just until the edges begin to set.

                Bake in Oven: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is puffed and set in the center. A toothpick inserted should come out clean.

                  Serve: Once cooked, allow the frittata to cool slightly for about 5 minutes. Garnish with fresh herbs and slice into wedges to serve. Enjoy warm or at room temperature!
